Carolina-Style Pulled Jackfruit

If you've not given jackfruit a try, here's the perfect recipe to introduce you to this zero point food. You will find several types of barbecue throughout the Carolinas. This one is from the eastern coast and has a strong African influence. The sauce is vinegary, thin, acidic, spicy, and full of black pepper. The BBQ sauce rounds out the tang. Ingredients
Fat free reduced sodium vegetable broth

Distilled white vinegar
1 tbsp(s)
Fresh lemon juice
1 tbsp(s)
Packed brown sugar

Black pepper

40 oz, 2 (20-oz) cans, drained and seeded
Onion
½ cup(s)

In medium saucepan, add broth, vinegar, lemon juice, brown sugar, black pepper, and salt and bring to boil. Reduce heat to medium and add jackfruit. Cook, stirring frequently, until liquid is almost completely absorbed, 7 to 10 minutes. Add onion and cook until slightly softened, 2 to 3 minutes. Top bread with jackfruit. Drizzle BBQ sauce on top.
