You might not be familiar with lupini beans, but they’re a great source of protein and a good ingredient to become familiar with. You’ll find them in jars, packed in brine. They have a firm, meaty texture and when roasted, they become crisp with a little bit of chew. Because they’re packed in brine, they taste well salted, so opt for a salt-free seasoning blend here.

Preheat the oven to 400°F. Line a sheet pan with parchment paper or silicone mat.

Pat the beans dry with paper towels or a kitchen towel and place on the prepared baking sheet. Coat the beans with cooking spray and sprinkle with the Cajun seasoning; stir gently to coat. Roast until the beans are dry and crisp to the touch, 50 to 55 minutes, stirring gently after 40 minutes. Cool completely on the pan; store in an airtight container for up to 2 days.
