Ingredients

Fat free cottage cheese

Fresh lemon juice

Dijon mustard

Worcestershire sauce

Olive oil

Anchovies canned in oil drained

Oil-packed tuna fish drained

Instructions

  1. In a mini food processor or small blender, puree the cottage cheese, lemon juice, Dijon, Worcestershire sauce, oil, anchovy (if using), garlic, salt, pepper, and 2 tbsp water until smooth.
  2. Crush or smash the crackers into crumbs.
  3. Toss the lettuce with most of the dressing. Arrange dressed lettuce on a plate.
  4. Sprinkle the cracker crumbs on top. Scatter the tuna over the crumbs. Drizzle remaining dressing on top. Add more black pepper, if desired.
  5. Serving = entire recipe
