Butternut squash noodles with turkey

Unsalted butter
1¼ tsp(s)
Spiralized butternut squash
1½ cup(s)
Granny Smith apple
½ medium, chopped
Shallots
1 large, sliced
Cooked turkey breast without skin and bone
3 oz, chopped
No-salt-added chicken stock
¼ cup(s)
Fresh thyme
1½ tsp(s), leaves, chopped
Table salt
¼ tsp(s), or to taste
Black pepper
¼ tsp(s), or to taste
Lemon zest
½ tsp(s), finely grated
Walnuts
1 tbsp(s), chopped
Cooking spray

Instructions

Lightly spray a medium nonstick frying pan with oil. Add ½ tsp butter and melt over medium heat.

Add butternut squash noodles, apple, and shallots. Increase heat to medium-high, cook, covered, stirring occasionally, for 3 minutes or until noodles begin to soften.

Stir in turkey, stock, thyme and season with salt and pepper. Cook, uncovered, stirring occasionally, for 3 minutes or until noodles are tender.

Stir in remaining ¾ tsp butter and lemon zest. Add a little more stock if needed to get a moist consistency. Spoon into a pasta bowl, sprinkle with walnuts and serve.
