Meals in bowls are a hot trend right now. This one's got some sweet and some heat, plus lots of gorgeous colour.

Ingredients

Fresh lime juice

2 tbsp(s)

Cilantro

2 tbsp(s), (plus extra for garnish)

Water

1 tbsp(s)

Sesame oil

4 tsp(s)

Honey

2 tsp(s)

Ginger root

2 tsp(s), grated

Table salt

¼ tsp(s)

Cooked long grain brown rice

1½ cup(s), warm or at room temperature

Canned black beans

15 oz, rinsed and drained

California (Hass) avocado

½ item(s), diced

Uncooked red onion(s)

1 small, finely chopped

Uncooked carrot(s)

1 medium, shredded

Grape tomatoes

1 cup(s), quartered

Mango(es)

1 cup(s), diced

Uncooked bell pepper(s)

1 cup(s), any colour, chopped

Instructions

  1. Put lime juice, cilantro, water, oil, honey, ginger and salt in a blender jar or mini-food processor; process until smooth.
  2. To serve, toss rice with beans, avocado, vegetables, mango and dressing; garnish with cilantro.
  3. Serving size: about 1 1/2 cups.

Notes

Dressing can be made up to three days in advance and refrigerated. Add chopped, cooked shrimp if you like (any additions could impact the recipe's SmartPoints value).
