Broiled Salmon with Pico de Gallo

Simply seasoned salmon fillets cook quickly under the broiler, creating an irresistible crust on top. A generous amount of Pico de Gallo is the perfect finishing touch, countering the spices with bright, tart flavours. We like the hot version here, but feel free to use mild if you prefer.

Cooking spray

Kosher salt

Ground cumin
½ tsp(s)
Smoked paprika
½ tsp(s)
Garlic powder

Black pepper

Uncooked farmed Atlantic salmon skinless fillet
20 oz, 4 (5-oz) fillets
Sabra Chunky Pico De Gallo
¾ cup(s), medium variety
Fresh parsley
¼ cup(s), coarsely chopped (optional)
Instructions

Preheat the broiler to high. Line a sheet pan with foil and coat the foil with cooking spray.

In a small bowl, combine the salt, cumin, smoked paprika, garlic powder, and black pepper. Arrange the salmon on the prepared pan. Sprinkle the spice mixture evenly over the salmon; lightly coat the salmon with cooking spray. Broil until the fish flakes easily with a fork or to desired degree of doneness, 7 to 9 minutes. Combine the Pico de Gallo and parsley, if using; spoon over the salmon.
