Sometimes a little break with tradition can be fun and delicious. This veggie pizza was inspired by the tasty offerings at the salad bar. For a pizza that requires less chopping and slicing, use packaged broccoli florets and sliced mushrooms from the produce section of your supermarket. Give the broccoli a quick steam in the microwave to parcook it before using.

Ingredients

Pizza dough mix

10 oz, or 1 prebaked thin pizza crust

Shredded reduced-fat Mexican-style cheese

1 cup(s)

Uncooked broccoli

10 oz, frozen, chopped, thawed and squeezed dry

Fresh mushroom(s)

10 oz, sliced

Table salt

¼ tsp(s)

Black pepper

tsp(s), freshly ground, or to taste

Instructions

  1. Sprinkle the cheese evenly over crust; top with the broccoli, mushrooms, salt, and pepper. Bake until the crust is golden, the cheese is bubbling, and the mushrooms are cooked through, 10–15 minutes. Serve at once.
  2. Yields 1/4 pizza per serving.

Notes

As always, a recipe is a template for variation. Swap cauliflower or broccolini for the broccoli if you wish.
