Ingredients

Unsalted dry-roasted cashews

1 cup(s)

Almonds

1 cup(s), sliced

Dried dates

1 cup(s)

Sweetened dried blueberries

1 cup(s)

Lemon

½ wedge(s), zest and juice from 1/2

Sea salt

¼ tsp(s)

Instructions

  1. Add the nuts to a food processor and blitz until broken down to pea-sized.
  2. Add in the dates and blueberries and blend until all ingredients are broken down and sticky.
  3. Add in lemon juice, zest, salt, and vanilla extract. Process until mixture pulls together to form a sticky mass.
  4. Portion and roll into 24 bite-sized balls. Store in the fridge for up to one week.
