- Add the nuts to a food processor and blitz until broken down to pea-sized.
- Add in the dates and blueberries and blend until all ingredients are broken down and sticky.
- Add in lemon juice, zest, salt, and vanilla extract. Process until mixture pulls together to form a sticky mass.
- Portion and roll into 24 bite-sized balls. Store in the fridge for up to one week.
