Ingredients
Frozen sweetened blueberries
4 cup(s), or fresh, (960 ml)
Water
½ cup(s), (120 ml)
Fresh lemon juice
1 tbsp(s), (15 ml)
Sugar
¼ tbsp(s), (60 ml)
Ground nutmeg
½ tsp(s), (2 ml)
Ground cinnamon
½ tsp(s), (2 ml)
All-purpose flour
2 cup(s), (480 ml)
Baking powder
4 tsp(s), (20 ml)
Sugar
1 tbsp(s), (15 ml)
Table salt
½ tsp(s), (2 ml)
Light butter
1 tbsp(s)
1% low fat milk
½ cup(s), (1%), (125 ml)
Vanilla extract
1 tsp(s), (5 ml)
Whipped topping light or fat free
8 tbsp(s), (120 ml)
Instructions

In a saucepan, combine blueberries, water, lemon juice, sugar, nutmeg, and cinnamon. Set pan over medium heat simmer 5 minutes until berries begin to break down.

Meanwhile, sift flour, baking powder, sugar, and salt together into a large bowl. Add butter and, using your fingers, mix until butter is pea-size and well blended. Add milk and vanilla and mix until mixture forms soft dough.

Shape dough into 8 balls and place balls on simmering berry mixture. Cover tightly with a lid and simmer 10 minutes, until dumplings are puffed up.

Transfer dumplings to individual dessert bowls and top with berry sauce. Spoon 1 Tbsp (15 mL) Cool Whip Light over each serving
