We transformed the beloved sandwich into a satisfying snack that’s so rich (thank you, avocado!) you won’t miss the bread. Avocado halves are scooped out a bit to make room for the filling, and the flesh that’s removed is chopped and added to the filling of lettuce, tomato, precooked bacon, and ranch dressing. Scoop in with a spoon so you can scrape out every last bit of avocado goodness.

Ingredients

Avocado

1 medium, halved and pitted

Kosher salt

2 pinch(es)

Romaine lettuce

¼ cup(s), finely chopped

Fresh tomato(es)

¼ cup(s), diced

Cooked crisp center cut bacon

1 slice(s), crumbled

Reduced fat ranch dressing

1 tbsp(s)

Instructions

  1. Scoop out some of the flesh from each avocado half, leaving a shell about ½-inch thick. Sprinkle each avocado shell with 1 pinch of salt. Dice the scooped-out avocado flesh. In a small bowl, combine the diced avocado, lettuce, tomato, and bacon. Add the ranch dressing and toss gently to coat. Divide the salad mixture evenly between the avocado halves.
