Ingredients

Fresh lime juice

3 tbsp(s), (45 ml)

Extra virgin olive oil

1 tsp(s), (5 ml)

Ground cumin

1 tsp(s), (5 ml)

Table salt

¼ tsp(s), (1 ml)

Canned black beans

1 cup(s), (250 ml), rinsed and drained

Grape tomatoes

½ cup(s), (125 ml), halved

Frozen corn

¼ cup(s), (60 ml), thawed

Serrano chile

¼ cup(s), (60 ml) (or any other green chile), canned

Red onion

2 tbsp(s), chopped, (30 ml), minced

Cilantro

2 tbsp(s), (30 ml)

Garlic

1 clove(s), large, , minced

Corn tortilla

4 item(s), (15-cm [6-inch]), toasted

Instructions

  1. Whisk together lime juice, oil, cumin, and salt.
  2. Add beans, tomatoes, corn, chiles, onion, cilantro, and garlic and stir to combine.
  3. Place tortillas on 4 plates and top evenly with black bean mixture. Serve at once.

Notes

Double duty: Make a double batch of the salad and serve it at another meal on a bed of salad greens or inside halved pita breads. May affect Points values
