Open faced grilled s’mores are a sophisticated way to finish off any summer BBQ.


Reduced-fat graham crackers

8 whole

Mini marshmallows

1¼ cup(s), (310 ml) roughly chopped

60-69% dark chocolate

1½ oz, (43 g) thinly shaved

Fresh raspberries

  1. Place 2 rows of graham crackers side by side on a rimmed baking sheet (or on a grill rack) to form a 22-cm (9-inch)square slab; sprinkle evenly with marshmallows and then sprinkle with chocolate.
  2. Preheat grill to medium heat.
  3. Set pan (or grilling rack) over indirect heat (to side of heat source). Cover grill; cook until chocolate melts and marshmallows soften, 3 minutes. Remove to a serving platter; gently press raspberries onto slab and serve immediately.
  4. Serving size: 1 graham cracker with topping


To make sure the s’mores don’t overcook, check the temperature inside the grill before getting started. It should register 200°C (400°F) for medium heat. If you don’t have a grill rack to assemble the slab, just use arimmed baking sheet. Coat your knife with cooking spray when chopping marshmallows so they’re easierto chop.
