Deliciously sharp goat cheese is the perfect filling for our baked breakfast delights.

Ingredients

Liquid egg substitute

1½ cup(s), (360 ml)

All-purpose flour

1½ cup(s), (360 ml)

Table salt

½ tsp(s), (2 ml)

Black pepper

½ pinch(es), (2 ml), freshly ground

Ground nutmeg

1 tsp(s)

1% low-fat milk

2½ cup(s), 1% low-fat milk, (600 ml)

Semisoft goat cheese

4 oz, (125 g) or herbed, cut into 12 pieces

Instructions

  1. Preheat oven to 400°F (200° C).
  2. In a blender, combine egg substitute, flour, salt, black pepper, and nutmeg. Blend 10 to 15 seconds, until well combined. Scrape down sides of blender with a spatula.
  3. With blender running, slowly add milk and process until smooth.
  4. Pour batter into a 12-cup muffin pan, filling each cup 3/4 full.
  5. Drop one piece of cheese into the centre of each filled muffin tin and press down with your finger until it’s submerged.
  6. Bake 35 minutes, until puffed up and golden brown. Serve immediately or they’ll collapse!
