Bananas with Coffee Zabaglione

Zabaglione is a thickened egg-yolk sauce usually made with Marsala wine. We used brewed coffee instead, but kept the luscious and creamy part just the way it was!

Ingredients

Banana

2 large, ripe

Uncooked egg yolks

2 large

Sugar substitute

2 tbsp(s), such as Splenda or Sweet N'Low (3 packets)

Black coffee

¼ cup(s), brewed, cooled

Vanilla extract

1 tsp(s)

Instructions

  1. Peel bananas, slice and divide between two individual serving bowls.
  2. Bring 1 inch of water to a simmer over medium heat in a high saucepan. Meanwhile, whisk yolks and Splenda together in a medium bowl that will fit snugly over saucepan; whisk in coffee and vanilla.
  3. Place bowl over saucepan and reduce heat so water simmers slowly. Continue whisking egg mixture over simmering water until thick, foamy and doubled in volume, about 3 minutes. Remove bowl from saucepan (be careful of escaping steam) and continue whisking off heat for 1 minute. Divide sauce between serving bowls.
  4. Yields 1 banana and about 1/3 cup of sauce per serving.

Notes

Flavoured coffees like hazelnut, cinnamon or vanilla cream will provide a bolder taste. May affect Points.
