Baked Fish Sandwich with Spiced Mayonnaise
Dried plain breadcrumbs
½ tbsp(s), whole-wheat
Uncooked lingcod fillet(s)
1 pound(s), or other type of cod, four 4 oz pieces
Reduced calorie mayonnaise
Fat free salsa
Mixed grain hamburger roll(s)
1 cup(s), baby leaves
- Combine bread crumbs, salt and pepper in a small dish. Place fillets on a dinner plate, dust each with bread-crumb mixture and press firmly to make crumbs stay in place.
- Coat a 10-inch nonstick skillet with cooking spray and heat over medium heat. Arrange fish in a single layer in skillet; cook for 5 minutes on one side and 3 minutes on the other side, or until fish is golden and flakes easily with a fork.
- Stir together mayonnaise and salsa in a small bowl. Spread about 1 1/2 tablespoons of mayonnaise mixture on the bottom half of each of the buns. Top each with a fillet and 1/4 cup of spinach leaves; cover with bun tops.
