That’s right: pizza for breakfast. Using a premade cauliflower crust and baking the eggs directly onto the crust mean this one-pan wonder can hit your morning table in less than 30 minutes.

Ingredients

Cauliflower pizza crust

5 oz, (1 crust about 10 inches in diameter)

Reduced fat sharp cheddar cheese made with 2% milk

1 cup(s), shredded

Cooked Canadian bacon

4 slice(s), finely chopped

Scallions

2 medium, sliced, white and green parts separated

Egg

4 large

Table salt

Black pepper

tsp(s)

Tomato

½ cup(s), finely chopped

Hot sauce

4 tbsp(s), for serving (optional)

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment and place the pizza crust on top. Bake the crust until 3 minutes less than the recommended cooking time.
  2. Top the crust with the cheese, bacon, and white scallion parts. Add the eggs, spacing them evenly on the crust. Bake until the bottom of the crust is golden, the cheese is melted, and the egg whites are firm but the yolks are still runny, about 10 minutes.
  3. Season the eggs with the salt and black pepper. Sprinkle with the tomato and green scallion parts. Cut the pizza into 4 pieces. Serve with hot sauce (if using).
