This recipe makes a great breakfast, lunch, or dinner. Swap Canadian bacon for the turkey bacon, if you prefer.

Uncooked turkey bacon

Egg

Whole wheat tortilla
1 medium
Avocado
¼ medium, thinly sliced

Arrange the bacon between paper towels on a microwave-safe plate. Microwave on High until crisp, 2 to 2 1/2 minutes. Meanwhile, coat a small nonstick skillet with cooking spray and heat over medium. In a medium bowl, whisk the eggs until well blended. Add the eggs to the pan; cook until scrambled, stirring frequently, 2 to 3 minutes.

Spoon eggs down middle of tortilla, top with avocado, and crumble bacon over top. Roll up and slice in half.
