Crispy bits of bacon are tossed with sautéed asparagus in this easy, delicious, perfect for springtime side. You need less than 25 minutes to make it, and only six ingredients, two of which are salt and pepper. Doesn't get much simpler than that. After cooking the bacon, sauté the asparagus and shallots in bacon fat (always a good idea) until nicely crisp-tender. A touch of white-wine vinegar helps tie everything together. This beautiful dish pairs well with just about anything, but especially chicken and fish. Peas would also be scrumptious prepared this way, or even a combination of asparagus and peas.

Ingredients

Uncooked center cut bacon

4 slice(s), cut into small pieces

Asparagus

1 pound(s), trimmed, cut into bite-size pieces

Shallots

1 medium, sliced

Kosher salt

¼ tsp(s), or sea salt

Black pepper

tsp(s), freshly ground (or more to taste)

White wine vinegar

1½ tsp(s)

Instructions

  1. Cook bacon in a large nonstick skillet until crisp, about 5 minutes. Remove from skillet with a slotted spoon to paper towels to drain; remove all but 1 teaspoon bacon fat from skillet.
  2. Add asparagus and shallot to skillet; cook over medium heat, stirring frequently, until shallots are golden and asparagus are crisp-tender, about 7 minutes.
  3. Return bacon to skillet and sprinkle with salt and pepper; toss over medium-high heat to warm through. Remove from heat; stir in vinegar.
  4. Serving size: about 2/3 cup.
