Shrimp burgers are a fun change of pace from moretypical beef or turkey patties. Add more or lesswasabi depending on your taste.

Ingredients

uncooked shrimp

450 gm, (1 lb) peeled deveined, patted dry

sweet red pepper(s)

¼ cup(s), (60 ml) minced

cilantro

¼ cup(s), (60 ml) chopped

uncooked scallion(s)

¼ cup(s), (60 ml) chopped

reduced calorie mayonnaise

2 tbsp(s), (30 ml)

minced garlic

½ tsp(s), (2 ml)

ground ginger

½ tsp(s), (2 ml)

table salt

¼ tsp(s), (1 ml)

panko breadcrumbs

¼ cup(s)

Sriracha hot sauce

¼ tsp(s), (1 ml) or to taste

reduced calorie mayonnaise

2 tbsp(s), (30 ml)

prepared wasabi paste

1½ tsp(s), (7 ml)

fresh lime juice

1 tsp(s), (5 ml) or to taste

toasted sesame oil

1 tsp(s), (5 ml)

ground ginger

½ tsp(s), (2 ml)

minced garlic

½ tsp(s), (2 ml)

packaged coleslaw mix (shredded cabbage and carrots)

2 cup(s), (500 ml)

sweet red pepper(s)

cup(s), (75 ml) chopped

cilantro

¼ cup(s), (60 ml) (plus extra for garnish)

uncooked scallion(s)

2 tbsp(s), (30 ml) chopped

whole wheat pita(s)

2 large, split in half

Instructions

  1. To make burgers, pulse shrimp in food processor until coarsely chopped (can also be done by hand).
  2. Combine all other burger ingredients (except pita) in a large bowl; gently fold in shrimp until combined. Shape into four even 1.25-cm (1/2-inch) thick patties; cover and chill for 30 minutes to overnight to set.
  3. To make slaw, combine mayonnaise, wasabi, lime juice, oil, ginger and garlic in a large bowl; keep chilled (may be made up to 1 day ahead). When ready to serve, combine dressing with remaining slaw ingredients.
  4. Off heat, coat a grill or grill pan with cooking spray; heat over medium heat. Grill burgers until firm and pink throughout, 8-9 minutes per side.
  5. To assemble burgers, place one burger in each pita half and fill with 75 ml (1/3 cup) slaw; garnish with cilantro and serve immediately.
  6. Serving size: 1 burger
