Experiment with the meat you like best for this rub ... but we've found it's great for beef dishes.

Ingredients

Peppercorn

2 tbsp(s), black

Kosher salt

4 tsp(s)

Orange zest

1 tbsp(s)

Ground ginger

¾ tsp(s)

Cooked salted horseradish-tree leafy tips

1½ tsp(s), or Asian spices

Instructions

  1. Pulverise spices in a coffee or spice grinder. Rub on meat half an hour before cooking. Makes 1/3 cup - enough for 4 to 5 pounds of beef. Store leftover mixture in an airtight container for up to 3 weeks.
