Argentinian Hearts of Palm Salad

This traditional Argentinian salad combines hearts of palm with avocado and tomato, all tossed with a fresh lime-cilantro dressing.


Ingredients
Water

Fresh lime juice
2 Tbsp
Olive oil
1½ Tbsp
Table salt
¼ tsp
Black pepper
¼ tsp
Uncooked scallions
3 Tbsp
Cilantro
2 Tbsp
Hearts of palm
14 oz
Tomato
2 small
Avocado
1 medium
Instructions

In a serving bowl, combine water, lime juice, oil, salt and pepper; stir in scallions and cilantro.

Add hearts of palm, tomatoes and avocado to bowl; gently toss to coat. Yields about 310ml (1 1/4 cups) per serving.
