Spoon this filling into your favourite premade pie crust or mini dessert cups. Or swirl some into hot oatmeal for a delicious morning treat.


Fresh apple(s)

3 medium, Fuji preferred, peeled, cut into 0.60cm (1/4-inch)

Packed light brown sugar

2 tbsp(s)

Fresh lemon juice

1 tbsp(s), or to taste

Lemon zest

¼ tsp(s)

Ground cinnamon

1 tsp(s)

Ground nutmeg

1 pinch, or to taste

Apricot jam

2 tbsp(s), or jelly


  1. In a non-reactive bowl, combine apples, sugar, lemon juice, lemon zest, cinnamon and nutmeg.
  2. Heat a large non-stick skillet over medium heat. Add apple mixture; cook until slightly softened, stirring occasionally, about 12 minutes. Remove from heat and stir in jelly. Serve hot or slightly cooled. Yields about 50ml (3 1/3 Tbsp) per serving.


To make mini pies, spoon the filling into ramekins and decorate with uncooked pie crust strips; bake until heated through and crust is cooked (could affect Points value). This recipe can easily be doubled or tripled.
