If you’re a fan of those fried apple pies from fast-food restaurants, you’ll love this lighter version that’s cooked in the air fryer. Egg roll wrappers replace pie dough, a lower-fat option that—when air-fried—cooks to a super-crispy texture. The fresh apple filling reaches perfect tenderness quickly in the microwave, with lots of cinnamon and just a touch of sugar to enhance the flavour. Though it will be tempting to bite in immediately, it’s best to let the rolls cool for a couple of minutes, as the filling will be very hot right out of the air fryer.

Cooking spray

2 cup(s), preferably Honeycrisp or Gala, peeled and chopped

Sugar

1 tbsp(s)

Cornstarch

½ tsp(s)

Ground cinnamon

½ tsp(s), divided

Egg roll wrapper

Powdered sugar (confectioner's)

Instructions

  1. In a medium microwave-safe bowl, stir together the apples, granulated sugar, cornstarch, ⅜ tsp cinnamon, and 2 tsp water. Microwave, uncovered, on High for 5 minutes or until the apples are tender, stirring after 3 minutes.
  2. Place an egg roll wrapper on a flat work surface with the corners set vertically (pointing up and down like a diamond shape). Moisten all edges of the wrapper with water. Spoon one-fourth of the hot filling horizontally across the center of the wrapper. Fold the bottom corner of the wrapper to the center, over the filling. Fold in the sides of the wrapper and roll up to seal.
  3. Preheat air fryer, if necessary, to 400°F. Line the bottom of the air fryer basket with parchment paper. Arrange the egg rolls in the basket, seam side down, and coat generously with cooking spray. Air-fry at 400°F until the tops are browned, 4 to 5 minutes. Turn the egg rolls over, coat with cooking spray, and air-fry until browned, 4 to 5 minutes.
  4. Place the egg rolls on a plate and allow to cool for a couple of minutes. In a small bowl, combine the powdered sugar and remaining ⅛ tsp cinnamon; sprinkle over the egg rolls.
  5. Serving size: 1 egg roll
