These hearty, sweet, and delicious muffins are great for breakfast or dessert. Seriously, this delectable apple treat is the perfect choice at any meal, and you'll find yourself reaching for one at all times of the day. They couldn't be easier to make, and you only need half an hour to get them on the table. To help lower the calories, this recipe utilizes two types of flour, all-purpose and whole-wheat, as well as fat-free skim milk and fat-free Greek yogurt. They nicely complement the Granny Smith apple, apple pie spice seasoning mix, and honey. Also, our reduced-fat cream cheese creates a delectable frosting for an already marvelous muffin.

8 oz, whipped variety, softened

Whole wheat flour

Spiced seasoning mix

1 tbsp(s), apple pie spice variety

Packed brown sugar

Plain fat free Greek yogurt

Fat-free skim milk

½ cup(s), plus 1 Tbsp.

Granny Smith apple

1 medium, peeled, cored, and chopped

Honey

Instructions

  1. Preheat oven to 400°F. Coat 12 nonstick muffin cups with cooking spray and set aside.
  2. Mix both flours, baking powder, baking soda, salt, and apple pie spice together in a bowl; set aside.
  3. In another bowl, beat egg, 1 tsp. vanilla, yogurt, ½ cup milk and butter until well combined; gently mix in reserved dry ingredients and apple until just combined.
  4. Divide batter evenly between the prepared muffin cups. Bake for 15 minutes or until a toothpick inserted into the center comes out clean. Let cool on wire rack for 5 minutes. Remove muffins from pan and let cool completely on wire rack.
  5. Using a handheld mixer, beat cream cheese, honey, remaining 1 tsp. vanilla and remaining 1 Tbsp. milk together in a large bowl until well combined. Spread 1 heaping Tbsp. frosting on top of each muffin and serve.
