This Betty got a makeover - and she looks great! Fat and calories were reduced, but not flavourful layers of cinnamon-infused bread and sweet apples.


Ingredients
Cooking spray

Oatmeal bread
8 slice(s), cut into 1/2-inch cubes
Reduced-calorie margarine
¼ cup(s), melted
Sugar
1 tbsp(s)
Ground cinnamon
¾ tsp(s)
Apple
4 medium, Granny Smith or McIntosh, peeled, cored and cut into 1/2-inch cubes
Fresh currants
¼ cup(s)
Fresh lemon juice
1 tbsp(s)
Packed light brown sugar
¼ cup(s)
Vanilla extract
1 tsp(s)
Ground nutmeg
¼ tsp(s)
Instructions

Preheat oven to 350ºF. Spray an 8-inch square baking pan with cooking spray.

In a large bowl, combine bread cubes, margarine, granulated sugar and cinnamon; toss to combine. Arrange 1/3 of bread cube mixture in bottom of prepared pan.

In a large bowl, combine apples, currants, lemon juice, brown sugar, vanilla and nutmeg. Spoon 1/2 of the apple mixture over bread layer. Repeat layers, ending with bread cubes on top.

Cover with foil and bake 45 minutes. Uncover and bake until top is golden brown, about 15 minutes. Cut into 8 pieces and serve hot.
