This fruity spin on slaw is just the thing for a hot summer’s day. Buy a bag of precut, thickly shredded carrots for convenience.

Ingredients

Apple

1 large, red, cored, thinly sliced and then cut into matchsticks

Apple

1 large, green, cored, thinly sliced and then cut into matchsticks

Fresh lemon juice

2 tbsp(s), or less to taste

Carrots

3 cup(s), cut into matchsticks (many stores sell these precut)

Chives

¼ cup(s), chopped

Olive oil

1 tbsp(s)

Sugar

1 tsp(s)

Table salt

½ tsp(s)

Black pepper

¼ pinch(es), or more to taste

Feta cheese

2 oz, French-variety suggested, crumbled

Instructions

  1. Place apples in a large bowl and toss with lemon juice. Add carrots, chives, oil, sugar, salt, pepper and cheese; toss to mix thoroughly. Yields about 3/4 cup per serving.

Notes

If you want more tang, use blue cheese instead of French feta (could affect Points values).
