These bars are perfect for a grab-and-go breakfast, a snack, or as a dessert served warm with whipped cream or vanilla yogurt!


Ingredients
Whole wheat flour
¼ cup(s)
Uncooked quick oats
⅔ cup(s)
Sliced almonds
⅔ cup(s), toasted
Ground cinnamon
1 tsp(s)
Baking powder
½ tsp(s)
Baking soda
¼ tsp(s)
Dark brown sugar
⅓ cup(s)
Olive oil
3 tbsp(s)
Egg whites
2 serving(s)
Almond butter (unsalted, no oil, or sugar added)
2 tbsp(s)
Vanilla extract
1 tsp(s)
Frozen unsweetened dark sweet cherries
¾ cup(s), or fresh, pitted, halved

Preheat oven to 350°F. Line the base and sides of a 20 cm square baking pan with parchment paper, extending paper 2 cm above edge of pan.

Place flour, oats, almonds, cinnamon, baking powder, baking soda and ¼ teaspoon salt in a large bowl and stir to combine. Whisk brown sugar, oil, egg whites, almond butter and vanilla in a small bowl until smooth. Add brown sugar mixture to flour mixture. Stir until well combined. Fold through cherries. Spoon mixture into prepared tin. Smooth surface with spatula.

Bake for 25 minutes or until golden brown and a skewer inserted into the centre comes out clean. Cool completely in tin on a wire rack. Use the overhanging paper to lift slice from tin, then cut into 16 squares.
