With the amazing crisping powers of the air fryer, there is absolutely no reason to deep-fry mozzarella sticks. We opt for mozzarella bites here, cutting the string cheese into bite-sized pieces for maximum breading surface (and maximum crunch). Be sure to freeze the coated cheese pieces for a few minutes before air-frying; we tried cooking them straight away, but the cheese tended to ooze out too much in the air fryer. Do be sure to line the basket with parchment paper to catch any small oozes that might occur.
