Peanut butter (salted, with oil and sugar)

In a large bowl, mix together the peanut butter, sugar and egg until well combined. Place the bowl in the fridge and allow to chill for 1 hour.

Preheat the oven to 400°F. Line 2 baking trays with baking paper. Roll the dough into 25 balls and place onto the baking trays. Use a fork to lightly flatten them, first in one direction and then the other, to create a crisscross pattern on top of each one.

Place in the oven and bake for 10-12 minutes, until golden and firm. Transfer to a wire rack and leave to cool before eating.
