This super easy to make low SmartPoints dressing is great over a salad, as a spread, or dip for veggies!

Ingredients

Garlic

4 clove(s), large

Olive oil

2 tbsp(s)

Silken tofu

1 cup(s)

Fresh lemon juice

1½ tbsp(s)

Capers

1 tbsp(s), (+1 tsp juice)

Dijon mustard

1 tbsp(s)

Maple syrup

1 tsp(s)

Fresh parsley

2 tbsp(s)

Instructions

Preheat oven to 400F.

Place garlic cloves in a small oven-proof dish and cover with oil. Cover the dish with aluminum foil and roast the garlic cloves in the oil 20 minutes.

Blend all ingredients in the food processor until emulsified.
