Taco Party

Serves 8

Nothing says Cinco de Mayo like an abundant spread of taco fixin’s! This spread of must-have taco fillers are all 0 SmartPoints, the only element you need to track are the Weight Watchers tortillas, which are only 2 SmartPoints per serving (enough to make room for a margarita or cerveza!). Mix and match these traditional toppings for a truly unique taco.

Serve with Weight Watchers tortillas.

Mango Salsa

  • 2 cups mango, cubed
  • 2 Tbsp jalapeño, minced
  • 2 Tbsp cilantro, minced

Combine all ingredients, mix thoroughly. Cover and store in the refrigerator until ready to use.


Pico de Gallo

  • 1.5 cups tomato, chopped
  • ½ cup white onion, chopped
     

Combine all ingredients, mix thoroughly. Cover and store in the refrigerator until ready to use.


Pickled onions

  • 1 cup red onion, finely sliced
  • 1 Tbsp salt
  • 0.5 Tbsp sugar
  • 1 cup apple cider vinegar
  • ½ cup water

Combine all ingredients, mix thoroughly. Cover and store in the refrigerator until ready to use.


Roasted Cauliflower

  • 2 cups cauliflower, chopped into small florets
  • 1 tsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp lime juice

Preheat oven to 400F. Toss together the cauliflower, oil, salt, pepper, and garlic powder. Arrange the cauliflower on a parchment-lined baking sheet and roast for 15 minutes. Remove from oven and sprinkle on lime juice.


Turkey

  • 1 lb extra lean ground turkey
  • 1 tsp olive oil
  • 1 Tbsp oregano, dried
  • 1 Tbsp Mexican chili powder
  • 1 tsp salt

Set a medium sauté pan over medium-high heat. Add the oil and spices and toast for 30 seconds. Add the turkey and cook for 10 minutes, until fully cooked, breaking up the meat with a wooden spoon.


Black Beans and Corn

  • 1 tsp olive oil
  • 1 Tbsp Mexican chili powder
  • .5 Tbsp smoked sweet paprika
  • 1 tsp cumin, ground
  • 2 cloves garlic, minced
  • 1 540 ml can black beans
  • 1 cup corn, frozen and defrosted
  • 1 tsp lime juice

 Set a medium sauté pan over medium-high heat. Add the oil and spices and toast for 30 seconds. Add the garlic, beans and corn and cook for 10 minutes, until warmed through. Remove from heat and add lime juice.
