Strata with Turkey Sausage, Roasted Peppers and Goat Cheese

This filling strata would be welcome at any brunch or light lunch party. Prep ahead and bake just before serving so you can enjoy the party too!

Ingredients

  • 1 spray(s) cooking spray

  • 450 g uncooked turkey sausage(s), spicy, casing removed, crumbled

  • 2 cup(s) uncooked onion(s), chopped

  • 16 oz cremini mushroom(s), sliced

  • 1⁄2 cup(s) roasted red peppers (packed in water), chopped, rinsed and drained well

  • 12 oz French baguette bread, diced

  • 4 cup(s) fat free egg substitute

  • 2 tsp kosher salt

  • 1⁄4 tsp black pepper

  • 4 oz soft-type goat cheese, crumbled

Instructions

  1. Preheat oven to 175°C (350°F).

  2. Spray a large lasagna pan (or foil pan if bringing to a party) with cooking spray. Spray a large non-stick skillet with cooking spray.

  3. Cook sausage, onion, and mushrooms, stirring often to break up sausage, until sausage is lightly browned, onions are softened, and all liquid from mushrooms is evaporated (about 20 minutes). Add roasted peppers to pan.

  4. Combine sausage/veggie mixture in prepared lasagna pan with bread cubes.

  5. Whisk together egg substitute, salt and pepper and pour over mixture.

  6. Dot top with goat cheese and cover with aluminum foil.

  7. Bake for 1 hour covered and approximately 30 minutes uncovered or until strata is set.
