Nooch and Caramel Popcorn
Have you tried nutritional yeast yet? Okay, we admit it, it may be a bit of an uncommon ingredient, but it is a well-known staple in the vegan and vegetarian communities, loved for imparting cheese and umami flavours into just about any dish.
Made of deactivated yeast that has been dried into golden flakes, nutritional yeast is an excellent source of B vitamins, it’s a complete protein, contains little sodium and fat, and is gluten-free. Often used as an additive to make vegan mac and cheese, (or anything that needs a cheesy flavour-boost) here we have taken a spin on the traditional cheese and caramel popcorn, by substituting in nutritional yeast for (sometimes florescent!) cheese powder.
Find nutritional yeast in the dry goods section of many grocery stores, at bulk foods stores, or at most health food markets.
- 10 cups air popped popcorn
- 1 Tbsp coconut oil, divided
- 2 Tbsp nutritional yeast, crushed
- ¼ tsp turmeric
- ¼ tsp onion powder
- ¼ tsp garlic powder
- 1 tsp salt
- ¼ tsp vanilla extract
- 1 Tbsp brown sugar
- 1 Tbsp maple Syrup
Prepare popcorn according to package directions. Divide between two bowls.
Mix the nutritional yeast, turmeric, onion powder, garlic powder, and salt together in a small bowl. Melt 1/2 Tbsp of coconut oil and pour over one of the bowls of popcorn. Sprinkle with “cheese” mix.
In a small saucepan, melt the remaining coconut oil, and whisk in vanilla extract and brown sugar, and maple syrup until a syrup forms. Pour the sugar syrup over the remaining plain popcorn and toss. Mix the two popcorn flavours together and serve
