Hot Turkey Sandwich

These amazing open-faced sandwiches make great use of leftovers. The sandwich topping can easily be made ahead and reheated too.

Ingredients

  • 1 tsp olive oil, extra virgin

  • 1 1⁄2cup(s) uncooked onion(s), yellow onion, thinly sliced

  • 3 oz of cooked turkey breast without skin or 1 slice(s) turkey roll or 2 slice(s) of julienned deli turkey per sandwich

  • 1 Tbsp dry turkey gravy mix

  • 1 tsp rosemary, minced

  • 1 tsp white pepper

  • 2⁄3 cup(s) frozen baby peas, defrosted

  • 8 slice(s) whole wheat bread, light

  • 1 Tbsp fresh parsley, flat-leaf, minced

Instructions

  1. Heat oil in a large nonstick pan over medium heat. Cook onions for 5-7 minutes, stirring frequently, until lightly browned and only slightly soft.

  2. Add turkey, gravy, rosemary, pepper, and peas and cook until heated through, approximately 2 more minutes.

  3. Toast bread and pile turkey mixture on top of each. Garnish with parsley and serve warm.
