2 large, cut into thin strips

Egg whites

2 serving(s), large

Cumin seeds

¾ tbsp(s)

Table salt

½ tsp(s)

Chili powder

½ tsp(s)

Black pepper

¼ pinch(es), (optional)

Uncooked extra lean ground turkey breast

16 oz

Onion

½ medium, red, chopped

Raw egg

1 large, beaten

Fresh parsley

2 tbsp(s), chopped

Garlic

1 clove(s), large, minced

Ground tarragon

½ tsp(s)

Table salt

½ tsp(s)

Black pepper

¼ pinch(es)

Hard roll

4 item(s), high-fiber, 2 oz each

Instructions

1

Preheat oven to 425°F. Coat a nonstick baking sheet and broiler rack with cooking spray.

2

In a large bowl, combine potatoes, egg whites, cumin, salt, chili powder and pepper; toss to coat. Transfer to baking sheet.

3

Bake until potatoes are barely tender, about 15 minutes.

4

Meanwhile, in a large bowl lightly combine turkey, onion, egg, parsley, garlic, tarragon, salt and pepper. Form into 4 burgers.

5

Increase oven temperature to broil. Broil fries until crispy, about 10 minutes. At the same time, broil burgers until brown, about 5 minutes on each side.
