Teriyaki sauce

¼ cup(s), reduced-sodium

Cilantro

¼ cup(s), fresh, chopped

Sweet potato

2 small, peeled and cut into 2-inch chunks (about 2 pounds)

Instructions

Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.

In a large bowl, whisk together teriyaki sauce and cilantro. Add sweet potatoes and toss to coat.

Transfer sweet potatoes to prepared baking sheet and bake until fork-tender, about 40 minutes. Yields about 3/4 cup per serving.
