Savoury strata with turkey sausage, roasted peppers, and goat cheese

This filling strata would be welcome at any brunch or light lunch party. Prep ahead and bake just before serving so you can enjoy the party too!


Ingredients
Uncooked turkey sausage
450 gm, spicy, casing removed, crumbled
Onion
2 cup(s), chopped
Cremini mushrooms
16 oz, sliced
Roasted red peppers (packed in water)
½ cup(s), chopped, rinsed and drained well
French baguette bread
12 oz, diced
Fat free egg substitute
4 cup(s)
Kosher salt
2 tsp(s)
Black pepper
¼ pinch(es)
Soft-type goat cheese
4 oz, crumbled

Preheat oven to 175°C (350°F).

Spray a large lasagna pan (or foil pan if bringing to a party) with cooking spray. Spray a large non-stick skillet with cooking spray. Cook sausage, onion, and mushrooms, stirring often to break up sausage, until sausage is lightly browned, onions are softened, and all liquid from mushrooms is evaporated (about 20 minutes). Add roasted peppers to pan.

Combine sausage/veggie mixture in prepared lasagna pan with bread cubes. Whisk together egg substitute, salt and pepper and pour over mixture. Dot top with goat cheese and cover with aluminum foil.

Bake for 1 hour covered and approximately 30 minutes uncovered or until strata is set.
