Ingredients
Honeydew melon
1 large, chopped (about 4 cups)
Cucumber
1 medium, peeled, chopped (about 2 cups)
Uncooked scallions
4 medium, thinly sliced (about 1/2 cup)
Plain fat free yogurt
2 tbsp(s)
Fresh lemon juice
2 tbsp(s)
Fresh spearmint
2 tbsp(s), leaves, chopped
Table salt

Instructions

Toss all ingredients together in a large serving bowl. Serve at once or cover and refrigerate for up to 2 days. Yields about 1 cup per serving.
