This spicy concoction perks up just about any food:

Ingredients

Red bell pepper

1 medium, seeded and coarsely chopped

Onion

1 cup(s), coarsely chopped

Jalapeño pepper

1 medium, seeded, deveined and minced

Garlic

2 clove(s), large

Plum tomato

1 cup(s), diced

Cilantro

1 tbsp(s), chopped

Fresh lime juice

2 tbsp(s)

Table salt

½ tsp(s)

Black pepper

¼ pinch(es), freshly ground

Instructions

In a food processor, pulse the bell pepper, onion, jalapenos and garlic until fairly smooth. Transfer to a nonreactive serving bowl; stir in the tomatoes, cilantro, lime juice, salt and pepper. Refrigerate, covered, until chilled, at least 1 hour.
