Cooked cauliflower rice

Cooked quinoa

Cucumber

Grape tomatoes

Red onion

Feta cheese

Tzatziki sauce
2 tbsp(s)
Cooked skinless, boneless chicken breast
3 oz, (about 1 breast), shredded with Greek seasoning of choice
Instructions

Spoon cauliflower rice into a serving bowl. Top with with quinoa, cucumber, grape tomatoes, red onions, and chicken breast. Sprinkle feta cheese and drizzle with tzatziki sauce.
