For spicier gingerbread add 1/2 teaspoon white pepper, 1/4 teaspoon cloves and 1/2 teaspoon cinnamon with the ginger.


Ingredients
All-purpose flour
1½ cup(s)
Baking powder
1½ tsp(s)
Ground ginger
1¼ tsp(s)
Baking soda
½ tsp(s)
Table salt
½ tsp(s)
Unsalted butter
4 tbsp(s), melted
Unpacked brown sugar
⅓ cup(s)
1% low-fat buttermilk
½ cup(s)
Molasses
⅓ cup(s)
Raw egg
1 large, lightly beaten
Instructions

Heat oven to 350ºF. Coat a 9-inch square cake pan with cooking spray. Whisk together flour, baking powder, ginger, baking soda and salt.

Stir butter, brown sugar, buttermilk, molasses, 1/4 cup water and egg together until smooth.

Stir dry ingredients into butter mixture. Pour into pan. Bake until cake springs back when lightly touched, about 45 to 50 minutes. Serve warm or at room temperature.
