Air Fried Rigatoni Cannoli Bites

These one-bite treats replace the traditional cannoli shell with air-fried al dente rigatoni. On their own, the pasta tubes might seem a little tough--but when stuffed with the lightly sweetened ricotta filling, they soften up a bit before popping into your mouth. The best way to fill them is to use a piping bag with a small tip, or fill a zip-top bag and trim a small piece off of one of the corners. These are best served shortly after filling.

Cooking spray

Uncooked rigatoni
2 oz
Part-skim ricotta cheese
⅓ cup(s)
Honey
1½ tsp(s)
Mini semisweet chocolate chips

Instructions

Cook pasta in boiling water until al dente, 12 to 13 minutes. Drain and coat well with nonstick spray.

Preheat an air fryer, if necessary, to 400°F. Place pasta in air fryer basket and air-fry until blistered all over the exterior, 6 to 8 minutes, shaking basket every 3 minutes. Cool at room temperature for 10 minutes (pasta will get crispier as it cools).

Meanwhile, in a small bowl, stir ricotta, honey, and chocolate chips. Spoon mixture into a small zip-top plastic bag. Snip a small hole in one bottom corner of bag (just large enough for chocolate chips to pass through). Pipe mixture into cooled rigatoni.
