This hearty combo of sausage, beans, and winter greens is sure to warm you up on a chilly night. Instead of Swiss chard, you can use other sturdy greens in this dish. Try collard, mustard greens, or Tuscan kale.

Ingredients

uncooked turkey kielbasa

13½ oz

canned cannellini beans

29 oz, rinsed and drained

canned diced tomatoes

14½ oz

fat-free reduced sodium chicken broth

¾ cup(s)

uncooked scallion(s)

2 medium, thinly sliced

black pepper

tsp

uncooked Swiss chard

2 cup(s), thinly sliced leaves, lightly packed

Instructions

  1. Cut kielbasa on diagonal into 1½-inch slices. Combine kielbasa, beans, tomatoes, broth, scallions, and pepper in 5- or 6-quart slow cooker. Cover and cook until liquid is slightly thickened, 4–5 hours on high or 8–9 hours on low.
  2. Stir Swiss chard into slow cooker. Cover and cook on high just until wilted, about 5 minutes. Divide sausage mixture evenly among 6 bowls.
  3. Serving size: 1 1/4 cups
