1. Eggs and arugula

Combine2 c baby arugula, 1 c halved grape tomatoes, 1 large minced shallot,and1 tsp champagne vinegarin medium bowl; season with pinch eachsaltandpepper, and toss to coat. Top with4 poached or sunny-side up eggs. Garnish with chopped scallions andred pepper flakes. Serving size: ¾ cup salad and 1 egg.Points value:0

2. Vegetable curry

Coat large skillet withnonstick sprayand heat over medium-high heat. Cook1½ c chopped onion, 5–7 minutes to soften. Add1 Tbsp minced garlic, 1 Tbsp peeled fresh minced ginger, 1 tsp curry powder, ½ tsp ground cumin, and½ tsp dried coriander; cook 30 seconds. Add1 medium diced red pepper, 1 c diced eggplant, and1 c bite-size cauliflower florets; cook, stirring frequently, until crisp tender, 5–7 minutes. Stir in1 c drained, rinsed canned chickpeas, ½ c vegetable broth, and1 tsp fresh lime juice; simmer 5 minutes. Garnish withplain fat-free Greek yogurt, chopped cilantro, andlime wedgesif desired.Serving size: ¾ cup curry.Points value: 0
