Quick Shrimp Fried Rice

Ingredients
- 1 tsp sesame oil
- 1/2 cup(s) cooked brown rice
- 3/4 cup(s) frozen peas and carrots (defrosted)
- 3 oz cooked shrimp (chopped)
- 1 large egg(s)
- 2 tsp low sodium soy sauce (or season with salt and pepper to taste)
- 1/2 Tbsp uncooked scallion(s) (chopped)
Instructions
Heat oil in a nonstick skillet over medium-high heat; add rice and heat through. Add peas, carrots and shrimp; toss and heat through. Push rice mixture to side of pan and crack egg in middle; scramble egg. Stir egg into rice mixture and sprinkle with soy sauce; garnish with scallions.
