Notes

Place the capers and olives in a small bowl, cover with water and leave to soak for a few minutes, to draw out some of the saltiness of the brine they are preserved in.Meanwhile, mix the tomatoes, basil, olive oil, lemon zest and juice together in a bowl. Drain the capers and olives and stir into the mixture, adding 1 tablespoon of cold water.Tip this dressing into the frying pan around the tuna and cook for 30 seconds to just heat through whilst still maintaining its fresh flavour.Serve the tuna steak on the rocket, with the dressing spooned over the top.Serve with boiled new potatoes.
