Drain & rinse ½ tin of mixed bean salad in water, put in a bowl with 1 tsp capers, 1 spring onion, ¼ cucumber, ¼ avocado & ½ red pepper, all finely chopped. Stir in 1 tsp finely chopped mint leaves & 1 tsp olive oil, Mix in a handful of rocket, serve topped with 1 tbsp reduced-fat houmous.
