Beef and vegetable noodles

  • Cut a carrot into matchsticks and thinly slice a leek, a celery stick and 2-3 slices of chilli (optional)

  • Dissolve 2 teaspoons of miso paste in 450ml boiling water, add to a saucepan along with the veg and bring to the boil

  • Reduce the heat and simmer for 2 minutes

  • Add 25g of dried fine egg noodles to the saucepan and cook over a low heat for a further 6 minutes, stirring occasionally

  • Just before the noodles are ready, spray a non-stick frying pan with cooking spray. Add 100g of rump steaks, sliced into thin strips, and stir-fry over a high heat for 2 minutes

  • Season, then stir in 1 tbsp of sesame seeds and cook for a few seconds more, taking care that they don’t burn

Chargrilled steak with crispy potato wedges

  • Preheat the oven to 180°C. Cut 225g of potato into wedges, spray with calorie-controlled cooking spray and roast for 30–35 minutes, turning half way through

  • When the potatoes are almost ready, spray a sirloin steak with cooking spray and grill or griddle for 3–4 minutes each side depending on how well you like it cooked

  • Serve the steak with the wedges and a mixed salad

One tray roast chicken

  • Preheat the oven to 180°C. Cut 150g of potatoes into chunks and boil for 10 minutes, until just tender, then drain

  • Mix lemon zest, a crushed small garlic clove and a pinch of fresh thyme or rosemary

  • Slash a skinless chicken breast and rub this mixture all over

  • Put the potatoes into a roasting tin; add a sliced leek and pepper and spray with calorie‑controlled cooking spray

  • Arrange the chicken on top, drizzle with lemon juice and roast for 20 minutes, stirring halfway through. Add a handful of cherry tomatoes and stir; roast for a final 10 minutes

Quorn cottage pie

  • Cook 225g potatoes in boiling water for about 20 minutes, until tender

  • Meanwhile, heat a large non-stick saucepan and spray with calorie-controlled cooking spray

  • Add 85g Quorn mince, a chopped onion, leek, carrot and swede and cook for about 5 minutes, stirring often

  • Use the mixture to fill a small jacket potato

  • Prepare 250mls of vegetable stock and add to the pan with a pinch of mixed herbs, bring to the boil, then simmer without a lid for 20 minutes (add additional water if required). Season to taste

  • Preheat oven to Gas Mark 5/190°C/375°F

  • Drain the potatoes and mash them with a little skimmed milk and seasoning

  • Transfer the Quorn mixture to an ovenproof dish and top with the mashed potato

  • Bake for 25–30 minutes until thoroughly heated and browned

Veggie wraps

  • Cook 150g Quorn mince in calorie‑controlled cooking spray with a small crushed garlic clove, a pinch each of cumin and ground coriander for 5-10 minutes

  • Add shredded red and green cabbage, carrots and spring onions, cover the pan and cook for a further 5 minutes

  • Stir well before serving in lettuce leaf ‘wraps’ with 110g of brown rice.scattered with 2 tbsp coriander
