Zucchini, red onion and tomato pan fry

This simple vegie side also makes a great meatless main meal. Just serve over rice, pasta or couscous (contains gluten), with a sprinkling of parmesan (contains dairy).
2 small, cut into 3cm cubes
1 medium, thinly sliced
1 cup(s), (160g), grape variety
2 clove(s), crushed
⅓ cup(s), roughly torn leaves
- Heat oil in a large non-stick frying pan over high heat. Add zucchini and onion, cook, stirring occasionally, for 5 minutes or until zucchini and onion are golden and tender.
- Add tomatoes and season with salt and pepper and cook over medium-high heat, stirring frequently, for 2 minutes or just until tomatoes start to soften.
- Add garlic, cook over medium heat, tossing, for 30 seconds or just until fragrant.
- Remove from heat and stir in basil. Check seasoning and serve.
