Zucchini, ham and chive pikelets

These scrumptious savoury pikelets are bursting with flavour and so easy to whip up!

Ingredients

White self-raising flour

½ cup(s)

Wholemeal self-raising flour

¼ cup(s)

Skim milk

½ cup(s)

Egg(s)

1 medium, lightly beaten

Fresh chives

1 tbs, finely chopped

Zucchini

1 small, grated

97% fat-free deli sliced ham

40 g, fat trimmed, diced

Olive oil

1 tbs

Instructions

  1. Combine flours in a medium bowl. Make a well in the centre. Whisk milk, egg and chives in a medium jug. Pour egg mixture into well in flour mixture and whisk until just smooth. Stir in zucchini and ham.
  2. Heat half the oil in a large non-stick frying pan over medium-high heat. Drop 1 heaped tablespoon of batter into pan. Repeat to make 6 pikelets. Cook for 2 minutes or until bubbles rise to the surface. Turn and cook for 1 minute or until golden and cooked through. Repeat with remaining oil and batter to make 12 pikelets. Serve.

Notes

SERVING SUGGESTION: Chive yoghurt. Mix 1 cup (280g) no-fat Greek-style natural yoghurt with 1 tablespoon finely chopped fresh chives.
